Ingredients:

  • Sauce:

  • 3 TBSP Olive Oil

  • 1 Onion

  • 1 Red Pepper

  • 3 Cloves Garlic

  • 1 tsp Ground Cumin

  • 2 tsp Smoked Paprika (NOTE: sweet paprika is also fine)

  • 1⁄8 tsp Smoked Carolina Reaper (NOTE: we like it spicy!! It’s fine to omit)

  • 1 28 oz Can Coarsely chopped canned whole tomatoes

  • 1 tsp Salt (to taste)

  • 1⁄2 Tsp Black pepper

  • 6 Ounces Farmer’s cheese ( a rich, velvety, crumbly cheese)

  • 2 TBSP Pesto

  • 8 Large Farm Fresh Eggs

Method:

Make the Sauce

• Heat oil in a large skillet over medium though. Add onion and bell pepper. Cook

until very soft about 15 minutes. At the garlic and cooking until tender, one minute;

stir in the cumin, paprika and powdered pepper cook another minute. Pour in the

tomatoes and season with the salt and pepper: simmer until the tomatoes have

thickened, about 15 minutes. Taste and add more pepper powder, salt, or to taste.

Poach the eggs in the sauce

• Crack your eggs separately in small bowls.

• Gently submerse each egg into the sauce by making a dent with the bottom of your

ladle and gently easing the egg into the sauce taking care not to break the egg.

Finish the Shashuka

• When your eggs are set, (approximately 7-10 minutes) Sprinkle with crumbled

farmer’s cheese and and dot with pesto sauce.

• Serve into individual bowls making sure that each guest gets plenty of rich sauce and

and individual egg.

• (Pro- tip: Ladle the egg into the bowl first by coming under the egg with the ladle and

then scooping the remaining sauce into the bowl and topping again with the pesto

and cheese if desired)
